Crêpes with pistachio sauce and ricotta

With a creamy filling of ricotta cheese, cooked ham and chopped pistachios, these crêpes are a perfect meeting of French tradition and Italian flavors.

Ingredients

  • Eggs 5
  • Butter 50 gr
  • Margarine 50 gr
  • Flour 150 gr
  • Ricotta cheese 250 gr
  • Cooked ham 150 gr
  • Milk 1/2 l
  • Stock cube 1
  • Chopped Pistachio 190 gr
  • Nutmeg q.b.
  • Salt to taste
  • Pepper to taste
  • Pistachio grits to taste

Procedure

  1. Prepare the béchamel with 4 dl milk, 60 gm flour and 40 gm margarine.
  2. Then incorporate 2 eggs and the stock cube one at a time, and season with salt, pepper and nutmeg.
  3. Finally, mix 150 gr. ricotta cheese, cooked ham and chopped pistachios.
  4. With the remaining eggs, flour and milk, a teaspoon of salt and a cup of warm water, make the batter for the crepes.
  5. Grease a nonstick frying pan about 6 inches in diameter with margarine, pour in the batter one ladleful at a time and, swirling slightly, spread it over the entire surface until a thin crêpe is obtained.
  6. Stuff the resulting crepes with the filling and roll them up.
  7. Place them side by side in an oven dish greased with a little butter and cover with butter curls.
  8. Bake for about 10 min. in a hot oven at 220°C.
  9. Serve with Pistachio Grits on top as decoration
