Fettuccine with Pistachio and Truffle Pesto, Castelmagno cheese, Pumpkin and slices of Truffle

Ingredients

  • 250 g Sciara Pistachio Fettuccine
  • 200 g Pumpkin
  • 80 g Castelmagno cheese
  • 2 tablespoons Sciara Pistachio and Truffle Pesto
  • 2 tablespoons Fresh cream
  • 1 teaspoon Wildflower honey
  • A splash of white wine
  • Fresh sage
  • A handful of Pistachios in small pieces
  • A few slices of summer Truffle preserved in oil
  • Extra virgin olive oil, salt and pepper to taste

Procedure

  1. Wash the pumpkin and cut it into small cubes.
  2. In a pan, melt 1/2 tablespoon of Pistachio and Truffle Pesto over low heat along with honey, sage, a pinch of pepper, a tablespoon of oil, and two tablespoons of water.
  3. Add the diced pumpkin and cook it until it becomes quite tender (but still a bit crispy on the outside).
  4. Add some water or vegetable broth if needed.
  5. Once ready, remove the sage.
  6. Boil the Fettuccine in plenty of salted boiling water and cook for about 8 minutes.
  7. Meanwhile, in a saucepan, melt the diced Castelmagno cheese in the cream over low heat, along with 1 and a half tablespoons of Pistachio and Truffle Pesto, a pinch of pepper, and a splash of wine.
  8. Stir.
  9. Drain the pasta and add it to the pan with the pumpkin. Also, add the Castelmagno cream, a ladle of cooking water, and cook for another couple of minutes.
  10. Serve the Fettuccine garnished with Chopped Pistachios and slices of Truffle.
