Cold Pasta with Sciara Pistachio Pesto and Seasonal Vegetables

Pasta Fredda al Pesto di Pistacchi Sciara e Verdurine di Stagione
A colorful and flavorful Sicilian-style cold pasta with Sciara artisan pistachio pesto, grilled vegetables, and fresh cherry tomatoes. Perfect for summer!

Ingredients

  • 320 g (11 oz) of short pasta (farfalle, ditalini, or penne)
  • 1 jar of Sciara Pistachio Pesto – La Terra del Pistacchio
  • 3–4 zucchinis
  • 1 bell pepper (red, yellow, green, or orange)
  • 1 can of sweet corn
  • Yellow and red cherry tomatoes
  • 1 clove of garlic
  • Fresh basil leaves
  • 150 g (5 oz) of mixed salad greens
  • Salt to taste
  • Black pepper to taste
  • Extra virgin olive oil

Procedure

  1. Prepare the vegetables: Wash and trim the zucchinis and bell pepper. Remove the seeds and grill the pepper on a hot grill. Grill the zucchinis as well, then cut them into strips.
  2. Quarter the cherry tomatoes and place them in a bowl. Season with finely chopped garlic, fresh basil, salt, and a drizzle of olive oil.
  3. Cook the pasta in plenty of salted boiling water. Drain it very al dente and let it cool at room temperature.
  4. Combine the ingredients: Add the cherry tomatoes, grilled zucchini, and Sciara pistachio pesto to the cooled pasta. Mix gently but thoroughly.
  5. Prepare the mold: Grease a ring-shaped mold with olive oil and line it with strips of grilled bell pepper, alternating colors.
  6. Fill the mold: Spoon in about two-thirds of the pasta mixture, pressing gently to compact it. Cover with plastic wrap and refrigerate for at least 3 hours.
  7. Unmold and garnish: When ready to serve, unmold the pasta ring and fill the center with the mixed salad, seasoned with olive oil and salt.
  8. Serve in slices, ideally accompanied by a chilled glass of Sicilian white wine.
