Pasta Salad with Shrimp, Pistachio Cream, and Sciara Granules

The Sicilian summer is scented with the sea and pistachios, and this pasta salad is the perfect embodiment of those authentic flavors that tell the story of our land. A fresh, balanced, and nutritious dish that combines the sweetness of Mazara del Vallo red shrimp with the creaminess of Sciara pistachio pesto, topped with a crunchy pistachio granule finish. It's a meeting of the sea and land, full of tradition and artisanal quality—ideal for light yet flavorful lunches.

Ingredients

  • 320g of short pasta of your choice
  • 1 kg of large shrimp
  • (200g of boiled and chopped green beans, if desired)
  • 1 jar of Sciara – La Terra del Pistacchio pistachio pesto
  • Sciara – La Terra del Pistacchio pistachio granules
  • A few Sciara – La Terra del Pistacchio shelled pistachios
  • Salt
  • Extra virgin olive oil
  • 1 Sicilian lemon (juice and grated zest)

Procedure

  1. Rinse the shrimp under running water and place them in a pan with a drizzle of extra virgin olive oil. Sear them for one minute per side, then deglaze with the juice of one lemon and cook for 5-6 minutes.
  2. Once cooked, let them cool, then peel them (except for a few, which will be used for decoration) and cut them into pieces.
  3. In a large pot of boiling salted water, cook the pasta until al dente.
  4. Then drain it and transfer it to the pan where the shrimp were cooked. Add the pistachio pesto and mix well. If needed, add a couple of tablespoons of pasta cooking water to achieve a creamy consistency.
  5. Plate the dish, let it cool, and serve topped with pistachio granules, a few shelled pistachios, the whole shrimp with shells, and grated lemon zest for a touch of freshness.
