Ingredienti

  • 150 g Flour “00”
  • 180 g Sciara Almond cream
  • 1 Medium egg
  • 100 g Dark chocolate
  • 90 g Fresh cream
  • Chocolate flakes

Procedimento

  1. Pour the Almond cream into a bowl and add the egg: mix well with a fork.
  2. Add the flour and mix again to obtain a smooth, firm mixture.
  3. Turn the oven on to 150°C and place the dough in the refrigerator for 15 minutes.
  4. Meanwhile, prepare the ganache: chop the chocolate with a knife and pour it into a bowl.
  5. Heat the cream in a saucepan, bringing it to the boil and pour it hot over the chocolate, stirring with a whisk until it melts and allows you to obtain a smooth, homogeneous and shiny cream.
  6. Cover the ganache with a sheet of cling film and leave to cool, then place in the refrigerator for 15-20 minutes.
  7. Take the almond mixture and form balls the size of a walnut. Use your thumb to make a hollow in the center and place the pastries on a baking tray lined with baking paper.
  8. Cook for 13-15 minutes maximum, remove from the oven and let cool completely.
  9. Take the ganache, whip it to a cream with an electric whisk and use it to fill the hollow you created in your Mandorlotti.
  10. Decorate with chocolate flakes and serve.
