Risotto with Pistachio Pesto, Smoked Salmon and Cherry Tomatoes

A culinary journey between Sicily and the sea, where the fragrance of Pistachio pesto blends with the delicacy of smoked salmon. This pistachio risotto recipe, enriched with cherry tomatoes and onion, is an ode to Sicilian flavor and tradition.

Ingredienti

  • 170 g Rice
  • 190 g Sciara Pistachio Pesto
  • 80 g Smoked salmon
  • 10 Tomatoes
  • 1/4 Onion
  • 4 tablespoons Extra virgin olive oil
  • 25 ml White wine
  • Vegetable broth to taste
  • Salt to taste

Procedimento

  1. Finely chop the onion.
  2. Take a saucepan and sauté the onion together with the oil.
  3. Once the onion is golden brown, add the rice and toast it for a few minutes.
  4. Deglaze the rice with the wine and let it evaporate.
  5. Add boiling broth until the rice is covered and stir frequently as it cooks.
  6. While cooking, check the rice and if you see it dry, add broth and stir; it should stay moist and not stick to the pan.
  7. Meanwhile, cut the salmon into small pieces.
  8. Take the cherry tomatoes, wash them and cut them in half.
  9. Halfway through cooking the rice, add the salmon and cherry tomatoes, stir, and finish cooking.
  10. Once it is cooked, remove it from the heat, incorporate the Pistachio Pesto and let it cream.
  11. Serve the rice hot on plates.
