Savory cannoli with "Oro" Pistachio pesto and ricotta

Of course you will know the legendary Sicilian cannoli with sweet ricotta, which is difficult to resist, but have you ever thought of making savory cannoli?

Ingredienti

  • 3 rectangular sheets of phyllo dough (about 75 g)
  • 150 g sheep's ricotta
  • 70 g "Oro" Pistachio Pesto
  • 1 tablespoon fresh cream
  • 30 g butter
  • fresh currants
  • pepper to taste
  • Chopped Pistachio to taste

Procedimento

  1. Roll out the phyllo dough and brush it with the butter previously melted in a bain-marie; place one sheet on top of the other (making the buttered surfaces stick together) and cut eight rectangles of approximately 9x6 cm.
  2. Take the cannoli molds, butter them, place them diagonally on each rectangle and wrap it with phyllo dough.
  3. Take the baking tray or baking tray, cover it with baking paper and place the cannoli on it, taking care to place the overlapping corners on the paper, so that they do not open during cooking.
  4. Place the cannoli in a preheated oven at 180° and cook them for approximately 8 minutes.
  5. Take the ricotta, mix it with the Pistachio pesto, the cream and a pinch of pepper and place it temporarily in the refrigerator.
  6. Once cooked, remove the cannoli from the oven and let them cool before removing them from the molds.
  7. Take the ricotta previously mixed with the Pistachio pesto and place it in a piping bag (if you don't have it you can use a food bag, pour the ricotta into it, cut a corner of the bag and squeeze the mixture out). Fill each cannoli with the cream.
  8. Decorate the ricotta that comes out from one of the two sides with Sciara Chopped Pistachio and the other with a red currant.
  9. Arrange the cannoli on a serving plate and accompany them with chopped pistachios and some fresh currants.
